Molasses Cookies

I have finally found my favorite molasses cookie recipe. These cookies are very chewy with a rich, spicy molasses flavor. I love this recipe because it is quite flexible. You can use light or dark molasses. Grandma’s molasses is a brand found in most grocery stores. On the label, “original” means light molasses and dark molasses is labeled as “robust”. A third kind of molasses, blackstrap, can be found in health food stores. Light molasses contains the most sugar because of the way molasses is processed. Peanut Butter Cookies

Peanut butter cookies are a classic. They taste great with a cold glass of milk. This recipe is for cookies that are crumbly and crunchy, not soft and chewy. I used creamy peanut butter but I think crunchy peanut butter would taste great also. I sprinkled turbinado sugar on top of the cookies giving them an interesting texture and flavor.

Sugar Cookies

This is the best sugar cookie recipe out there. It goes together so easily, you don’t even have to sift the dry ingredients. The cookies are crispy until you frost them and then they soften up perfectly. The almond extract adds a little something special to the flavor. Russian Tea Cakes

We have enjoyed a winter wonderland in Flagstaff this past week. Seven inches of snow arrived at night, covering the ground and trees. I finally had time to do a bit of holiday baking. This is one of my favorite Christmas cookie recipes. My Mom has been making them for as long as I can remember. Luckily for me they turn out perfectly at high altitude also.
