These caramels turned out even better than I had imagined. They are smooth and chewy. The pumpkin purée and spices give them a rich flavor that is perfect for autumn. I love the roasted flavor of the pepitas. Marshmallow Easter Eggs

I enjoyed the marshmallows I made a few months ago so much that I wanted to make them in the shape of eggs for Easter. I wasn’t sure how to go about doing this until I stumbled upon Chef Keller’s Bouchon Bakery recipe. This recipe varies from mine due to the use of egg whites. It also brings the sugar mixture to a higher temperature ensuring a firmer shape. I really like using vanilla seeds instead of vanilla extract. You can definitely taste the difference. Homemade Marshmallows

I had been wanting to make marshmallows for quite a while but the whole idea seemed a little intimidating. I pictured the process to be long and complicated with lots of room for error. I couldn’t have been more wrong. Marshmallows are not at all difficult to make yourself. Using a candy thermometer will ensure your sugar mixture gets to the right temperature and your mixer will do all of the hard work making it fluffy. It is so satisfying to watch a few simple ingredients transform into something delicious.
