Pumpkin Spice Cupcakes

To celebrate one of my favorite holidays, I made these spooky little cupcakes. They are moist, rich and deliciously spiced. The creamy frosting is not too sweet and compliments the cupcakes perfectly. I had a lot of fun decorating them but I think they would be wonderful undecorated as well.

  • 2 1/2 cups flour
  • 2 tsp cinnamon
  • 3/4 tsp nutmeg
  • 3/4 tsp ginger
  • 1/2 tsp cloves
  • 1/2 tsp allspice
  • 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 1/3 cup brown sugar
  • 3 large eggs
  • 3/4 cup milk
  • 1 1/4 cup pumpkin puree


  1. Preheat your oven to 350 degrees Fahrenheit. Line your cupcake pan with paper liners. In a large bowl, sift together the flour, spices, salt, baking powder and baking soda and set aside.
  2. In your mixer bowl, beat the oil, sugar and brown sugar until lighter in color and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the milk and pumpkin puree. Stir in the flour and spice mixture and pour the batter into the cupcake liners until they are 3/4 of the way full.
  3. Bake for about 25 minutes until the tops of the cupcakes spring back when pressed. Remove from the oven and cool in the pan for a few minutes before removing the cupcakes to cool completely on a wire rack.

Cinnamon Cream Cheese Frosting

  • 2 8 oz packages cream cheese, softened
  • 1/2 cup butter, softened
  • 2 cups powdered sugar, sifted
  • 1 tsp vanilla extract
  • 1 to 1 1/2 tsp cinnamon


  1. In your mixer bowl, cream together the cream cheese and butter until smooth. Add the vanilla and beat until well incorporated then carefully stir in the powdered sugar and cinnamon.
  2. Add more powdered sugar if necessary until the frosting reaches your desired consistency.
